Why I chose this pasta

Slow-milled from Timilia wheat, shaped through bronze dies and dried gently to safeguard both the natural fibre and deep cereal flavour while keeping gluten modest.

This is not your usual pasta

Stone-ground wheat keeps the aroma and all the fibre of ancient grains. Bronze dies shape the surface, letting sauce cling to every piece. Each batch dries gently at a low temperature for up to three days, preserving the full grain character. Only 100% Sicilian ancient durum wheat is used for a true regional taste.
