Miele Millefiori, from Sicily
Aldo started as a hobbyist beekeeper but turned his passion into an award-winning artisan business. Since 1998 his farm has been ICEA controlled organic. The honey, fruits and nuts grow in clean air, soil and water at over 650m above sea level. No GMOs, preservatives, added acids, pectin, artificial flavourings, colourings or gluten.
Aldo's approach is ours, 'All Natural'. That is why we asked him to make these products for The Sicilian Delicatessen.
The hives are located in fields of mixed wildflowers whose pollen, when collected by the bees, naturally flavours the honey. The honey is left for a number of months to slowly crystallise. Nothing is added. All Natural.

Honey from Mount Etna: A Unique Taste of Sicily
Honey from Mount Etna, or "Miele dell'Etna", is one of Sicily's most prized natural products. Produced in the fertile volcanic soil surrounding Europe's highest and most active volcano, this honey reflects the rich biodiversity and unique climate of the region. It is renowned for its distinctive flavours and exceptional quality, making it a beloved ingredient in Sicilian cuisine and an export treasure.
The environment around Mount Etna, with its mineral-rich soil and diverse plant life, provides bees with an abundance of wildflowers, chestnut trees, eucalyptus, and citrus groves to forage. This leads to a wide variety of naturally flavoured honey types. The Sicilian varieties include:
- • Chestnut Honey: Dark, bold, and slightly bitter, this honey is loved for its rich and complex flavour.
- • Orange Blossom Honey: Light and fragrant, it carries the strong essence of Sicilian citrus trees.
- • Wildflower Honey: Floral and aromatic, this subtlety flavoured honey is often used for cakes and puddings.
Beekeeping on Mount Etna is an ancient tradition, passed down through generations. The honey is typically produced using traditional methods, with minimal processing to preserve its natural flavours and health benefits. This unfiltered, raw honey is rich in antioxidants, enzymes, and nutrients, making it as beneficial as it is delicious.
Due to the unique combination of volcanic minerals and floral diversity, honey from Mount Etna is considered one of the finest in the world, cherished for its rich taste, purity, and connection to the land. Whether drizzled on cheese, baked into desserts, or simply enjoyed on toast, it provides a true taste of Sicily's natural bounty.
