Aldo: Hand-picking sun-ripened tomatoes

He’s a young Sicilian who took over his father’s business, a farmer with decades of experience. Aldo’s passion goes above and beyond: his vision is to keep improving his farm logistically, agriculturally, and in terms of communication. To deepen his knowledge, he studied at the School of Agriculture, where he refined his skills and strengthened his understanding of nature. 

He mainly grows olive trees and seasonal vegetables, which he sells to local markets. His aim is always to cultivate produce naturally, allowing the flavors of the soil, sun, water, and air to reflect his love for farming. His farm is located in a small town near Enna, in the eastern part of Sicily, where the clay-rich soil gives his crops a distinctive character. These qualities are why Carlo chose to collaborate with him. 

Aldo guarantees quality and authenticity in his tomatoes, planted in spring and harvested at the height of summer. He never uses chemicals on the plants or soil. This means the tomato plants remain smaller and the fruits ripen at different times, so Aldo and his father hand-pick them across several days. Because they are grown naturally, some tomatoes may show imperfections — a bug bite here, or a bit of blossom-end rot due to lack of calcium. These don’t make it into our sauce, but they demonstrate just how genuine and natural Aldo’s tomatoes are. Their sweetness speaks for itself, which is why we never need to add sugar to our final product: the tomato sauce.
