They are the ones who transform Aldo’s tomatoes into our sauce, carrying forward the same philosophy. They also produce their own preserves and spreads. Five years ago, Carlo was introduced to them through a friend who recommended their family-run business. Today, Stefania and her husband Giuseppe run it with the help of their two young sons, Manuel and Cristian, who are already remarkably skilled.
After deciding on the recipes together, Carlo spent a full day in Stefania’s kitchen fine-tuning the right balance of ingredients. We explained that we wanted a tomato sauce made the way our grandmothers used to prepare it:
simple, with no sugar, no preservatives, only Sicilian tomatoes grown in summer on our soil. Our relationship with Stefania’s family has continued to grow, and thanks to their work ethic and trust, we are now developing other products together as well.
They also produce green olive tapenade, pistachio pesto, and sundried tomatoes in oil.
