“Pesto alla Trapanese is one of those wonderful Sicilian recipes that proves how a few simple ingredients can create something truly special.
Originating from Trapani, on Sicily's western coast, this traditional pesto brings together tomatoes, almonds, basil and garlic, creating a beautiful balance of sweetness, freshness and nutty flavours.
Our version combines tomato passata and sun-dried tomatoes for a richer, more intense taste, with almonds, basil and a little chilli adding character.
It's one of my favourite examples of Sicilian cooking: honest ingredients, full of flavour, with nothing unnecessarily complicated.”
Traditionally served with busiate, Sicily's beautiful twisted pasta that catches every bit of pesto. I love finishing it with a drizzle of good Sicilian extra virgin olive oil and a little grated pecorino.
It's also delicious spread over toasted bread, stirred into a pasta salad or served alongside grilled vegetables.
One little tip: when mixing it with pasta, add a splash of the pasta cooking water to loosen the pesto and help it coat every twist beautifully.
