Stefania carries forward her family’s approach, working in careful stages from the harvest into the kitchen. Ripe tomatoes and aubergines are washed, peeled, and slow-cooked at low temperature to protect their clean flavor and richness. Each sauce is filled, bottled, and labeled by hand, upholding the family’s promise to maintain tradition in every batch.
In our family, passata is the starting point for so many traditional Sicilian recipes.
We gently simmer it with olive oil, garlic and fresh basil to make a simple tomato sauce for pasta. It's also our favourite base for a slow-cooked ragù, homemade pizza and comforting family dishes.
