The Pandorato leaves out raisins and candied fruit, letting the dough take centre stage. A sachet of icing sugar comes alongside it, ready for a snowy finishing touch before serving.
It started with Mario Fiasconaro’s small ice-cream shop in Castelbuono in 1953. His sons continued the family story, with pastry chef Nicola bringing Sicily’s flavours into the Italian panettone tradition.
Enjoy a slice with a dusting of icing sugar, or make it a little more indulgent with a generous layer of pistachio cream or chocolate and hazelnut spread.
